Carrot Cake Slice with Maple Cream Cheese Icing
Ingredients
190g softened butter
1C raw castor sugar
3 free-range eggs
4 large carrots (grated)
3/4C plain flour
3/4C S/R flour
2t G-Fresh Cinnamon
150g cream cheese (softened)
50g butter (softened)
3T pure maple syrup
METHOD
Cream butter and sugar until light and fluffy. Add in eggs, whip to combine, then add in your carrots, flour and G-Fresh Cinnamon. Stir till just combined, then pour into a lined slice tin and bake for 25 minutes in a pre-heated moderate oven. Once cooked, cool on a rack.
For the icing, whip butter, cream cheese and maple syrup together until well combined, then ice your cake (once it is completely cooled).
