Attention ladies — This one’s for you! If you’re looking for an easy dinner for 1, try this! It’s delicious AND healthy. It’s almost that good, that you won’t even need a boyfriend!

Ingredients

Half a spring onion

8 green beans

1/4 of an avocado

2 x sprigs of fresh mint

1/4 of a Lebanese cucumber

50gms of Low fat ricotta cheese

Hand full of walnuts

1x tsp of pepita seeds

1 salmon fillet

Lemon juice

Olive oil

Salt and Pepper

Method

Put your green beans in a pan with some water and steam – I cooked for about 4 minutes because I like them really crunchy. Set aside and let them cool.

Cut your salmon into cubes and throw into the frying pan. If you have a non-stick pan, don’t use any oil. Salmon is oily enough so you shouldn’t need any extra.

Add all your green salad ingredients into a nice bowl.

Rip cheese up and put on top, then sprinkle with walnuts and pepita seeds, garnish with the mint.

Then place your cubed salmon on top.

Finish with a drizzle of olive oil and juice of half a lemon.

Mix it up and Chow down – it’s the bomb.
