Tangy, sweet, bubbly and refreshing. And, oh my, just look at that colour. How can something so utterly bright not be bursting with berry goodness?! This drink is so simple to make too: just blend and pour. Without doubt, it is superior to any processed sugary drink that sprays you with an artificial fizz of chemicals as you unscrew the lid.

So… next time you feel those sweet drink urges coming on, why not treat yourself to a glass of crushy deliciousness, gorgeously sweet thanks to the untouched natural sugars in raspberries and coconut water!

Begin a warm summer’s morning with a refreshing zing alongside your breakfast. Make a big batch (just multiply the recipe by however many people you wish to spoil) and serve to your friends/family at your next gathering. Not only is this drink delicious, it’s simply radiating with bubbles of health benefits. Coconut water is full of electrolytes for keeping your body hydrated and energised. The fresh lemon juice helps flush your body of unwanted toxins whilst being an excellent natural source of citric acid, potassium and calcium. The mint is a wonderful palette cleanser and compliments the tanginess of the lemon and sweetness of the raspberries beautifully. Just try it for yourself and you’ll see!

INGREDIENTS

1/2 cup frozen raspberries

3 ice cubes

375ml coconut water (go for the stuff with no nasties added)

Juice of 1/3 of a fresh lemon

Small handful fresh mint (about 8 leaves)

METHOD

Simply chuck, tear and squeeze all of those beautiful ingredients in a blender and pulse for about 20 seconds, until nicely crushed and bubbly.

Pour into glass, plop in a straw and slurp till your heart’s content!
