Mitolo Family Farms has a delicious potato for every occasion.

Time 40 minutes

Serves 6–8 as a side dish

Ingredients

  • 1.5kg Mitolo Family Farms Chipping Potatoes, washed and quartered
  • 65ml olive oil
  • 6 large cloves of garlic, finely chopped or minced
  • Salt and pepper, to taste
  • 1 tbsp Italian seasoning
  • 70g parmesan cheese, freshly grated
  • 115g unsalted butter
  • Parsley, finely chopped for garnish
  • ½ cup crispy bacon bits (optional)

Method

  • Preheat your oven to 200°C. Grease a large baking sheet and set aside.
  • Bring a large pot of water to the boil and add a big pinch of salt. Add the potatoes, then lower the heat to a simmer. Cover the pot and leave to cook until potatoes are parboiled (5–8 minutes). Drain and set aside.
  • In a large bowl, combine olive oil, garlic, salt, pepper, herbs and parmesan cheese. Mix to combine, then toss potatoes through the mixture to coat evenly.
  • Spread the potatoes on the prepared baking sheet and cut side down in a single layer. Place the potatoes in the oven for 25 minutes, turning after 15 minutes, until potatoes are browned and crispy at the edges.
  • While the potatoes roast, melt butter in the microwave and combine with chopped parsley. Remove the roasted potatoes from the oven and drizzle with the melted butter. Add bacon bits (if using) and toss to coat well. Serve immediately.

Chipping Potatoes are best for chips, wedges or as a side to your Sunday roast. With a higher starch content, they get nice and crispy on the outside while still staying soft and fluffy on the inside!
