Ingredients

2 barramundi fillets
1 tbsp sesame oil
1 tsp fish sauce
2 tbsp soy sauce
1 tsp G-Fresh Herb and Garlic Seasoning
Small sprinkle G-Fresh Crushed Chillies (Hot)
1 small tsp G-Fresh Minced Ginger
1 small handful fresh coriander
1 fresh lime, juiced

Salad

2 cups red cabbage, thinly sliced
8 cherry tomatoes, halved
1 cup bean sprouts
¼ cup coriander, chopped
2 tbsp fresh mint, chopped
20g peanuts

Salad Dressing

1 tbsp sesame oil
1 tsp fish sauce
½ lime, juiced

Method

  • Preheat oven to 180°C.
  • In a small mixing bowl, add sesame oil, soy sauce, G-Fresh Herb and Garlic Seasoning, sprinkle of Crushed Chillies, Minced Ginger and coriander, and mix well.
  • In two pieces of foil, place the barramundi fillet in the middle and lift up the sides (like a boat).
  • Divide the soy mixture between the two fillets of fish and then wrap up to enclose the fish and fresh coriander on top.
  • Place into the oven to bake for 20 minutes, or until cooked to your liking.
  • Place all dressing ingredients into a small bowl and mix well.
  • Place all salad ingredients into a bowl and toss well. Pour the dressing over the top and toss again.
  • Pair with the cooked fish, add some more coriander… and eat!
