INGREDIENTS
:: Chicken Sliders
12 mini brioche rolls
1 bunch coriander
Juice 1 lemon
2T olive oil
2T G-Fresh Piri-Piri Seasoning
1 clove garlic
1 small piece ginger
4 free-range chicken breasts (cut into 3 horizontal pieces)
:: Coleslaw
1/4 red cabbage
1/4 white cabbage
1 carrot
1C kale
1 beetroot (raw)
1t G-Fresh Celery Salt
1/2t G-Fresh Smokey Paprika
1C mayo
Juice 1/2 lemon
METHOD :
:: Chicken Sliders
Blitz all of the marinate ingredients together, spoon over chicken pieces, rub in and then leave to marinate for 3 hours/overnight. Chargrill to cook.
:: Coleslaw
Shred your cabbage and kale, then grate your carrot and beetroot. Add mayo, lemon and spices, then mix thoroughly so all is coated. Fill your warmed mini brioche rolls with the chicken and coleslaw, then you have yourself a super-scrummy chicken slider!
