Serves 8

Ingredients

Crust

  • 188g all-purpose flour
  • 25g granulated sugar
  • ¼ tsp salt
  • 113g Western Star Unsalted Butter, cold and cubed
  • 60ml ice-cold water
  • 1 large egg
  • 1 tbsp milk
  • 1 tsp coarse sugar

Filling

  • 3–4 apples, peeled and sliced
  • 150g mixed berries (fresh or frozen)
  • 50g packed brown sugar
  • 17g all-purpose flour
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Crumble

  • 30g all-purpose flour
  • 25g oats
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp Western Star Unsalted Butter, cold and cubed

Method

  • To prep the crumble, mix together the flour, oats, brown sugar, granulated sugar and cinnamon, then use a fork to cut the cold butter into the mixture until it resembles coarse crumbs. Place in the fridge until ready to sprinkle over the galette.
  • To make the crust, mix together flour, granulated sugar and salt in a medium bowl. Using a pastry cutter or two forks, mash in the butter until the mixture resembles coarse crumbs. Add the water and stir until the mixture is moist (add 1–2 tbsp of extra water if the dough seems dry). Turn the dough out onto a lightly floured work surface and, using your hands, work the dough into a thick disc. Wrap the dough in plastic wrap and refrigerate it for at least 1 hour.
  • While the dough chills, prepare the filling by mixing the apples, mixed berries, brown sugar, flour, lemon juice, cinnamon and nutmeg together in a large bowl. Cover and set aside.
  • Line a large baking sheet with parchment paper. Remove dough from the fridge and place on a lightly floured surface, then roll the dough into a 12-inch circle — it doesn’t have to be perfect! Transfer dough to the prepared baking sheet.
  • Arrange the apple and berries (and any juices from the bottom of the bowl) into the centre of the dough, leaving a 2–3-inch border around them. Gently fold the edges of the dough over the filling, overlapping the dough as necessary. Press gently to seal the edges.
  • Whisk together the egg and milk, then brush the egg wash over the crust generously. Sprinkle with coarse sugar.
  • Remove crumble from the fridge and sprinkle it over the apple filling, then place the galette back in the fridge for 20 minutes.
  • Preheat the oven to 200°C, then bake galette for 35 minutes or until the filling is bubbly and the crust is golden brown.
  • Remove from the oven and allow to cool on the baking sheet for 10 minutes before slicing and serving with vanilla ice cream.
