Cosy and comforting, a slice of this feels like a warm hug.

Serves 6–8

Ingredients for cake

  • 170g butter, room temperature
  • 205g white sugar, plus extra for dusting
  • 2 medium eggs
  • 1 tsp baking soda
  • 450g plain white flour
  • 2 tsp cream of tartar
  • Pinch of salt
  • Sprinkle of cinnamon

Ingredients for stewed apple filling

  • 5–6 large green Golden Delicious Apples, peeled, cored and diced
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • ¾ tsp ground cinnamon
  • 2 tbsp lemon juice

Method

  • To make the stewed apple filling, add all filling ingredients to a medium saucepan. Bring the ingredients to a simmer, stir, then place the lid on and turn the heat down to low.
  • Cook for 3–5 minutes, checking at the three-minute mark for texture. Apples should be fork-tender. Remove from heat and set aside.
  • Meanwhile, start making your dough. Add the butter and white sugar to a food processor and blend until pale and creamy. Add the eggs and continue to blend until well combined.
  • Sift in the baking soda, flour and cream of tartar and blend until the dough comes away from the side of the bowl.
  • Tip onto a lightly floured bench and gently knead into a ball. Wrap in plastic wrap and place in the fridge for 30 minutes.
  • Preheat the oven to 180ºC and grease a rectangular baking dish.
  • Work the cold dough slightly in your hands to create a pliable dough.
  • Roll out half of the dough on a well-floured bench into the desired shape and use a rolling pin to carefully transfer the dough into the prepared greased dish. Gently press into the base and trim excess around the edges if needed.
  • Sprinkle a small amount of white sugar and cinnamon onto the dough and spoon 430g of the apple filling onto the base.
  • Repeat with the remaining dough: roll and gently lay on top of the apple mixture, gently press down and trim the edges until tidy. Sprinkle with a little more white sugar for decoration.
  • Cook for 25–30 minutes or until golden brown on top.
  • Remove from the oven and allow to cool before slicing into squares, then serve.

Golden Delicious and other green apples are great for this recipe because they hold their shape when stewing. In saying that, any of Foodland’s fantastic apple range, including their Peculiar Picks Apples, will work for this recipe — so use whichever ones you prefer!
