This simple starter will have your guests saying ‘wow’!
Time 30 minutes
Serves 4–6 as a starter
Ingredients
Balsamic cherries
- 300g Foodland Peculiar Picks Cheeky Cherries, pitted and halved
- 3 tbsp balsamic vinegar
- ½ bunch basil, finely shredded
Whipped ricotta
- 375g ricotta cheese
- 1 tsp lemon zest
- 2 tsp lemon juice
- Honey, to taste
- 4–6 slices sourdough bread, thick-cut
- Olive oil
- Fresh chopped basil, to garnish
- Flakey salt, to garnish
Method
- Toss the halved cherries, balsamic vinegar and basil together in a bowl, then allow to sit for 20 minutes.
- In a large bowl, use an electric beater to whip the ricotta, lemon zest and juice, and salt (to taste) until the mixture is smooth and airy.
- Drizzle olive oil in a large skillet over medium-high heat. Working in batches, add two slices of sourdough into the pan until slightly charred and crispy on both sides, adding more olive oil as needed for the remaining slices.
- To assemble, spread the whipped ricotta on the sourdough slices and top with balsamic cherries. Garnish with fresh basil, a drizzle of honey and some flakey salt.
