Sweet and crunchy, this tart celebrates your favourite cereal!
Time 1 hour 10 minutes + cooling
Serves 8 slices
Ingredients
- 1 sheet shortcrust pastry
- 100g butter, softened
- 1/2 cup caster sugar
- 1 egg
- 1 egg yolk
- 1 cup almond meal
- 1⁄4 cup plain flour
- 1⁄2 cup of strawberry jam
Corn Flakes topping
- 3 cups of Kellogg’s Corn Flakes
- 1⁄4 cup unsalted butter
- 2 tbsp honey
- 2 tbsp sugar
Method
- Preheat oven to 180°C.
- Lay the pastry across the base of a pre-lined and greased tart tin. Cut excess edges off.
- Line the pastry with baking paper and pastry weights. Bake for 10 minutes. Remove the paper and weights and bake for a further 10 minutes or until golden. Remove from oven and set aside to cool slightly.
- Spread jam across the base of the cooled tart shell.
- Using an electric mixer, beat the butter and caster sugar until pale and creamy. Add the egg and egg yolk and beat until just combined. Add the almond meal and flour and stir until combined. Spoon the mixture into the prepared pastry case and use the back of a spoon.
- Place the butter, honey and sugar in a small, heavy-bottomed saucepan. Set it on medium heat and cook until the sugar dissolves and the mixture begins to bubble. Remove from the heat and stir in the Corn Flakes.
- Pour over the tart filling and bake in the oven for 30 minutes, or until the filling is set. Please note: Corn Flakes will darken in colour. This is from the caramelisation of the topping and is nothing to worry about, but keep an eye on it as it bakes. If it’s darkening too quickly, reduce your oven temperature.
- Remove from oven and set aside in pan to cool completely. Enjoy your Corn Flakes Tart!
