We’re fancying up everyone’s fave footy franks!

Time 40 minutes + overnight standing time for pickles

Serves 7

Ingredients

  • DON® Footy Franks (Skinless or Skin-On)
  • 7 x gourmet bread rolls

Optional toppings:

  • Pickled red onions (recipe below)
  • Pickled cucumbers (recipe below)
  • Goat’s cheese Parmesan cheese
  • Mixed lettuce
  • Tomato chutney
  • Fresh herbs
  • Mustard
  • Jalapeños

Pickled red onion

  • 3 red onions, cut into thin rings 3 cups white vinegar
  • 1 cup water
  • 2 tbsp sugar
  • Pepper, to taste

Pickled cucumber

  • 1 cucumber, thinly sliced or diced
  • 2 cups white vinegar
  • 75g of sugar
  • 1⁄2 cup boiling water
  • Salt and pepper, to taste

Method

  • Cook the footy franks as per packet instructions.
  • Toast the rolls and then set up your own ‘build your hot dog’ station with all your wonderful toppings!

Pickled red onions

  • Place the red onions, water, vinegar, sugar and pepper into a small saucepan.
  • Bring to the boil briefly and then turn down to alow heat and simmer for 5 minutes.
  • Leave to cool, then pour onions and brine into an airtight container. Leave in the fridge for a few hours or overnight before serving.

Pickled cucumbers

  • Stir the sugar and salt into the boiling water and allow to dissolve, then add the vinegar, salt and pepper.
  • Place cucumber in an airtight container. Pour the hot liquid over the cucumbers and cover with a lid. Leave to stand for a few hours or overnight before serving.
