Feed a crowd in style with this meal bursting with fresh and simple flavours

Time 30 minutes

Serves Meal for 4, or nibbles for 15–20

Ingredients

1 packet of The Little Meat Co. Greek Pork Loin

For the tzatziki:

  • 1 cup Greek yoghurt
  • ½ Lebanese cucumber, grated and squeezed dry
  • 2 small garlic clovesclove, finely minced
  • 1tbsp lemon juice
  • 1tbsp olive oil
  • 1tbsp fresh dill or mint, finely chopped
  • Salt, to taste

For the lemon and oregano hummus:

  • 400g can of chickpeas, drained and rinsed
  • 2tbsp tahini
  • 2tbsp lemon juice
  • 2 small garlic clovesclove
  • 2tbsp olive oil
  • ½ tsp dried oregano
  • 2–4tsbsp cold water
  • Salt, to taste

For the quick pickled red onion:

  • 1 small red onion, thinly sliced
  • ¼ cup red wine vinegar
  • ½1/2 tsp white sugar
  • Pinch salt

For serving:

  • 200g fetta, crumbed 
  • Marinated olives 
  • Cherry tomatoes
  • Cucumber slices
  • Warm pita bread or flatbread
  • Fresh lemon wedges
  • Potato wedges, cooked to your liking

Method

Pork loin: 

  • Cook the pork loin according to packet instructions.
  • Once cooked, allow it to rest for 5–10 minutes before slicing thinly, then set aside until ready to assemble the platter.

Tzatziki:

  • Combine all ingredients in a bowl. Chill for at least 30 minutes for best flavour.

Lemon and oregano hummus: 

  • Blend everything until smooth and creamy. Add a little more water if needed for a silky texture.

Quick pickled red onion:

  • Stir everything together in a small bowl or jar and let sit for at least 20 minutes.

 

To assemble the platter:

  • Place the tzatziki and hummus into small serving bowls and drizzle with olive oil.
  • Arrange the sliced Greek pork loin across the board, slightly overlapping for a generous, abundant look.
  • Scatter marinated olives and pickled onion around the platter.
  • Add feta cheese, lemon wedges and potato wedges around the platter. 
  • Tuck warm pita around the edges.
  • Finish with a sprinkle of fresh herbs and a squeeze of lemon over the pork just before serving. Then, dig in!
