Mitolo Family Farms has a delicious potato for every occasion.
Time 25 minutes
Serves 6–8 as a side dish
Ingredients
- 900g Mitolo Family Farms Low Carb Potatoes, halved
- 200g feta cheese, crumbled
- 5 tbsp mini capers
- 1 red onion, finely sliced
- ½ lemon, juice only
- 2 tbsp dill, chopped
- 1 tbsp parsley, chopped
- 3–5 tbsp extra virgin olive oil
- ½ tsp dried oregano
- Salt and pepper, to season
Method
- Bring a large pot of water to the boil and add a big pinch of salt. Add the potatoes, then lower the heat to a simmer. Cover the pot and leave to cook until potatoes are fork-tender (about 20 minutes).
- Drain the potatoes and spread on a platter to cool.
- Scatter the capers, feta, red onion, dill, parsley and dried oregano over the potatoes.
- Drizzle with lemon juice and olive oil, and season with salt and pepper to taste. Toss together and serve.
