Next-Level Mashed Potatoes
We used: Mitolo Family Farms Mashing Potatoes
Boil potatoes until soft, then pass through a potato ricer OR remove from skins and use a potato masher until smooth. Add melted butter and a dash of milk until you reach a creamy consistency. Then serve with a pile of crispy oven-baked prosciutto on top, and a sprinkling of chopped chives.
At-Home Crisps
We used: Mitolo Family Farms Chipping Potatoes
Using a mandolin, finely slice potatoes with skin still on. Toss in a bowl with extra virgin olive oil, then lay on a baking tray covered in baking paper in a single layer. Don’t crowd the pan!
Bake in the oven at around 160 degrees for around 30 minutes, flipping halfway through and keeping an eye on them (they’re thin, so can burn quickly). Season with salt and serve with your favourite dip.
The Best Potato Salad of ALL TIME
We used: Mitolo Family Farms Low-Carb Potatoes
Par boil the potatoes, then drain and pop potatoes in a baking tray. Using the bottom of a jar or glass, smash the potatoes. until about 1cm thick. Drizzle with olive oil and then roast in a hot oven until very crispy (you can flip halfway as needed).
While the potatoes cook, make your dressing by combining natural yoghurt, lemon juice, salt, pepper, olive oil in a small bowl (make it to your own taste)! Prepare your fresh ingredients by finely dicing cucumber, celery, red onion, and a whole lot of fresh dill.
Pour crispy smashed potatoes into a big salad bowl. Crumble Harris smoked trout over the top, add your fresh ingredients and then toss with the dressing until all coated and creamy. Serve immediately for crispiness!
