 A quick and easy weeknight dish, without the fuss! 

Time 15 minutes

Serves 4-6

Ingredients

For the sauce

  • 65g regular soy sauce
  • 2tsp sesame oil
  • 65ml hoisin sauce
  • 35ml mirin
  • 1tsp crispy chilli oil 

For the ramen

  • 1 packet Little Meat Co. Beef and Pork Meatballs 
  • 250g ramen noodles, seasoning sachets discarded 
  • 500ml water
  • 2 bunches baby bok choy, thinly sliced
  • 300g bean sprouts 

To serve

  • 1tbsp sesame seeds
  • 1 spring onion, finely sliced
  • Fresh coriander leaves 
  • Crispy chilli oil, to garnish

Method

  • In a small bowl, combine the soy sauce, sesame oil, hoisin sauce, mirin and crispy chilli oil. Stir well. 
  • Heat a large frying pan or wok over medium heat. Add the meatballs and cook according to packet instructions (usually 6–8 minutes), turning occasionally until heated through and slightly caramelised.
  • Add water to the pan and bring to a gentle simmer. Add the ramen noodles and cook for 2–3 minutes, loosening with tongs as they soften.
  • Pour the sauce over the noodles and meatballs, tossing well to ensure they are evenly coated and glossy. 
  • Stir through the baby bok choy and bean sprouts and cook for a further 1–2 minutes, until just wilted but still vibrant.
  • Divide into bowls and finish with sesame seeds, sliced spring onion, coriander and a spoonful of crispy chilli oil if you like a little heat.
