Make every day a mocktail day with this easy treat.

Time 35 minutes + 4 hours refrigeration

Serves 2

Ingredients

  • 300ml Schweppes Pink Lemonade Zero Sugar
  • 60ml of cold sparkling water
  • 30ml strawberry shrub
  • Strawberry salt for decoration (optional)
  • Rose petals for decoration (optional)
  • Strawberry shrub
  • 1 cup strawberries, halved
  • 1 cup sugar
  • 1 cup apple cider vinegar

Method

  • To make the shrub, combine the strawberries, sugar and vinegar in a medium saucepan. Bring to a boil over medium- high heat. Remove from heat and let stand for 30 minutes. Strain into an airtight, heat- proof jar. Refrigerate until cold (about 4 hours).
  • To make the mocktail, add shrub, sparkling water, pink lemonade and ice to a cocktail shaker. Cover and lightly shake.
  • Wet the rim of a mocktail glass and dip it into the strawberry salt. Strain the mocktail into the glass and garnish with rose petals.
