Ingredients
2 Atlantic salmon fillets from Meat at the Mount
150g baby potatoes
2 tbsp olive oil, for baking tray
4-5 garlic cloves, peeled and minced
2 tbsp fresh chopped parsley
2 lemons, squeezed
Olive oil, drizzle to liking
Bunch of broccolini
Sliced lemon (optional garnish)
2 chilli, finely chopped (optional)
Chilli flakes, to liking (optional)
Salt
Crushed pepper
Method
Heat oven to 200°C.
Toss together potatoes, oil, salt and pepper. Spread out in an even layer, on a lined baking tray and roast for 15 minutes until they’re just starting to soften and brown.
Push potatoes to one side of the pan and place salmon fillets in the centre. Rub salmon evenly with garlic, salt, pepper, parsley and chilli flakes if using. Add the broccolini on the other side of the pan. Drizzle oil and lemon juice over everything on the baking pan.
Return pan to the oven and continue baking until the potatoes are golden and fork-tender and the salmon is cooked through (about 10-12 minutes).
Serve with fresh chilli, and enjoy!
