This quick dish makes the perfect starter, light lunch or indulgent snack.

Ingredients
- 4 slices of sourdough
- 2–3 medium-sized ripe Peculiar Picks Pears, cored and thinly sliced
- 50g gorgonzola cheese, crumbled
- 5 tbsp honey
- 1 tbsp extra virgin olive oil
- ½ cup walnuts, chopped
- 1 tbsp butter
- Fresh thyme leaves, finely chopped for garnish
- Sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Line a baking tray with parchment paper. Melt butter over medium heat in a non-stick pan. Mix 3 tbsp of the honey, then add the walnuts. Cook walnuts for 5 minutes, stirring often, until coated and lightly toasted. Pour nuts onto the lined baking sheet, then set aside to cool.
- Meanwhile, toast the slices of sourdough. Place on a lined baking tray and drizzle with olive oil.
- Arrange the pear slices on top of each piece of toasted bread, covering the surface evenly. Sprinkle the crumbled gorgonzola cheese over the pear slices.
- Place the toasts under the grill for 2–3 minutes or until the cheese is melted and bubbly.
- Transfer slices of toast to a serving plate. Drizzle with remaining honey and sprinkle with toasted walnuts, fresh thyme leaves, sea salt and freshly ground black pepper.
- Serve immediately.
