A takeaway staple made much easier for an everyday meal!

Time 40 minutes + plus 1 hour marinating time

Serves 8

Ingredients

  • 1kg boneless Foodland Pork neck, cut into small cubes
  • 8 skewers

For the souvlaki marinade

  • 1 lemon, zested and juiced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried onion flakes
  • 1 garlic clove, minced
  • ⅔ tbsp honey
  • 2 tbsp olive oil
  • Ground pepper

To serve

  • 8 pita wraps
  • 8 squares of parchment paper
  • Lettuce
  • 1 medium-sized tomato, thinly sliced
  • 1 small red onion, thinly sliced
  • Fresh parsley, finely chopped
  • Sweet or hot paprika (depending on your taste)
  • Tzatziki

Method

  • In a large mixing bowl, add all of the souvlaki marinade ingredients and mix well. Add the pork and toss well so the meat is covered in the marinade. Cover with plastic wrap and leave at room temperature for 1 hour.
  • Thread the meat on the skewers, about 5–6 pieces per skewer.
  • Preheat your pan or griddle on high. Place all the souvlakis (skewers) into the pan and drizzle with just a bit of olive oil. Season with salt on top.
  • Grill the skewers for 10–12 minutes, turning regularly.
  • To assemble, place a pita in the centre of a piece of parchment paper. Spread a tablespoon of tzatziki in the centre of the pita, along with lettuce, 2–3 slices of tomato and red onion, and a pork skewer. Add a generous sprinkle of chopped parsley and a dusting of paprika and wrap together in the parchment paper.
