A match made in heaven!

Time 20 minutes + 10 minutes rest

Serves 2

Ingredients

  • 2 Thomas Farms Grain Fed Scotch Fillet Steaks
  • ½ bunch of continental parsley
  • ½ tbsp dried oregano
  • ¼ tsp coriander, ground
  • 1 garlic clove
  • 1 red chilli
  • 1 cup olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper
  • Crispy roast potatoes, to serve.

Method

  • Season steaks with salt, pepper and a drizzle of olive oil. Set aside to come to room temperature.
  • Pick and finely chop the parsley leaves. Remove the seeds from the chilli and finely chop. Finely mince the garlic.
  • Add parsley, chilli, garlic, oregano, ½ cup of olive oil and red wine vinegar to a bowl and stir to combine. Season with salt and pepper, and set aside.
  • Preheat the oven to 240°C.
  • Add some olive oil to a large frying pan over high heat. Sear the steaks for 3 minutes on each side until golden brown, then place the steaks in the oven and cook for a further 7 minutes (or less, depending on how you like your steak and the size of the steak).
  • Remove from the oven and rest for 10 minutes.
  • Slice the steak, then serve with chimichurri and crispy roast potatoes.
