As seen on Season 3 of Adelady TV, Channel Nine.
Ingredients (serves 4)
3 x 250g salmon fillet (skin on)
6 potatoes
2 sprigs of dill
3 lemons
2t G-Fresh Fish Seasoning
G-Fresh Sea Salt Flakes (Black)
G-Fresh Sea Salt Flakes (Citrus)
20ml olive oil
20g flat leaf parsley
20g coriander
1 red onion
G-Fresh Atlantic Sea Salt / G-Fresh Pink Himalayan Salt
G-Fresh Black Pepper
200g mixed green salad
Dressing
20ml olive oil
Squeeze of 2 lemons
2T of whole egg mayonnaise
G-Fresh Atlantic Sea Salt / G-Fresh Pink Himalayan Salt
G-Fresh Black Pepper
Method
Cut potatoes into round pieces (approximately 2cm thick) and boil until soft. Season potatoes well with G-Fresh Salt and G-Fresh Black Pepper.
Rub the G-Fresh Fish Seasoning over salmon.
Turn the BBQ on to a medium heat and cook potato pieces (turn over once they start to get some colour). Cook salmon for approximately 1 and 1/2 minutes (each side).
Mix dressing ingredients together and drizzle over green salad. Break cooked salmon fillets into pieces and mix with the cooked potatoes in a bowl, then add all of it to the mixed green salad, including parsley, coriander and red onion.
Sprinkle with G-Fresh Black Sea Salt Flakes and G-Fresh Citrus Sea Salt Flakes, then serve.
