As seen on Season 3 of Adelady TV on Channel Nine.
Ingredients (serves 12)
1kg cooked whole peeled king prawns
1 whole fresh pineapple
1 bunch of fresh mint
Pinch of dried chilli
1t black sea salt flakes
1/2t ground pepper
1/2t dried mint
2 fresh lemons
2T extra virgin olive oil
BBQ the prawns and drizzle with olive oil, a pinch of sea salt flakes, ground pepper, chilli flakes and lemon.
BBQ the pineapple with sea salt flakes and ground pepper until golden brown.
Pulse (or finely chop) the cooked prawns and pineapple, and then combine with fresh mint, chilli, lemon juice, lemon zest, balsamic glaze, sea salt flakes, ground pepper and a pinch of dried mint.
Serve mixture in a mini poke bowl with a wedge of lime and a drizzle of balsamic glaze.
