Vibrant apricots make this slice stand out from the crowd.

Ingredients

150g butter, melted
1 tsp almond essence
200g plain flour, sifted
100g caster sugar
700g canned apricots, drained
Icing sugar (optional to serve)

Crumble Topping
50g butter, chilled
110g quick oats
65g caster sugar
45g plain flour
200g Menz FruChocs

Method

• Preheat oven to 160° fan-forced. Line a 18cm x 27cm baking tray with baking paper.
• Add almond essence, flour, sugar and melted butter into a medium mixing bowl. Stir and bring together to form a dough.
• Place the dough into the prepared baking tray and press evenly across the base.
• Bake for 15–20 minutes, or until the base starts to brown.
• Meanwhile, add topping ingredients (except the oats) into a food processor or blender. Pulse until it resembles a crumb mixture. Add oats to crumb mixture and stir to combine.
• Remove base from the oven and arrange halved apricots across the top. Evenly sprinkle the topping mixture across the apricots and return to the oven. Bake for a further 15–20 mins, or until the topping starts to brown. Cool completely in the tray, and dust with icing sugar before serving.

Note: this slice is best stored in the fridge. Make sure to bring it to room temperature prior to serving to make it easier to cut.
