It’s healthy as long as it has fruit in it, right?
Ingredients
125g butter, softened
100g brown sugar
1t vanilla paste
2 eggs
3 mashed bananas
140g Yummy Snack Foods hazelnut kernels (crumbed using a food processor)
255g gluten free plain flour, sifted
1t baking powder, sifted
1t bicarbonate of soda
1t ground cinnamon
1t ground cardamon
80ml golden syrup (or other sweetener such as honey, rice malt, or maple syrup)
Icing sugar, for dusting
Method
Preheat oven to 180°C. Lightly grease a loaf tin and line with baking paper.
Place the butter, sugar and vanilla in an electric mixer and beat for 5-10 minutes or until pale and creamy. Stop every few minutes to scrape down the sides of the bowl.
Add one egg at a time to the mixture and beat well to combine. Add the banana, hazelnut crumbs, flour, baking powder, bicarbonate of soda, cinnamon, cardamon and golden syrup, and stir to combine.
Spoon the mixture into your pre-greased loaf tin and bake for 85–90 minutes or until cooked when tested with a skewer.
Cool in the tin for 25 minutes before turning out onto a wire rack to cool completely. Dust with icing sugar to serve.
