If you’re desperately trying to get your child to eat GREEN foods, it’s bloody hard, I know! My 3-year-old will spot a spec of green in an enormous bowl of pasta and proclaim, “Ew, I don’t like green food”! It’s so frustrating!

So, I discovered that if you make ‘green food’ fun, kids are more inclined to give it a go. This one was inspired by Clean & Lean’s lettuce wrap recipe. Rather than using bread wraps to make lunches, why not swap the carbs for a lettuce leaf?

Lettuce wraps are so easy and more-ish.

 INGREDIENTS

4 large leaves of iceberg lettuce

A handful of turkey or chicken

¼ carrot, sliced or shaved

4 teaspoons of light cream cheese

2 teaspoons of cranberry sauce

METHOD

Like you would with a bread wrap, open your lettuce leaf and spread the cream cheese. On top of the cheese, ad a light layer of cranberry sauce. Place the chicken/turkey and carrot, then roll away.

Cut in half so they can see the delicious insides!
