:: GREEK LAMB SOUVLAKI ::
With all the trimmings!! Greek salad, garlic sauce, succulent Greek Seasoning BBQ lamb!
Ingredients
2 pita breads
1C hot chips – cooked
1 lebanese cucumber
2 tomatoes, cubed
½ Spanish onion, finely sliced
Kalamata olives – optional
½ block greek feta (I love Dondoni)
2T tzatziki sauce
200g lamb backstrap
1T G-Fresh Greek seasoning
Juice of 1 lemon
Olive oil
Method
Cube your lamb backstrap and place into a bowl. Add in a splash of olive oil, lemon juice and your G-Fresh greek seasoning. Give a good mix around and skewer.
Meanwhile, warm your hot chips in the oven.
Heat your pan with a little olive oil and cook your lamb skewers a minute on each side until beautifully caramelized. Once cooked – set aside in alfoil to rest whilst you finish the other elements to the dish.
Throw your pita in the oven for a quick minute to warm.
Cube your tomatoes, cucumber.
To assemble – spread your tzatziki over your pita. Place down some chips, cucumber, tomato, Spanish onion. Then slide your lamb off the skewer onto your pita. Crumble some feta over the top and wrap!
