Okay, don’t be hating on this sausage roll for it’s healthy content. Just appreciate the fact that it’s delicious and has about 1/5 of the fat of a normal sausage roll. AND most importantly, your kid will (hopefully) love it!

INGREDIENTS

(Makes 6 big rolls, which you can cut up to make 12 or 18 pieces)

Sandwich Press

2 chicken breasts – cut into strips

1/2 of a medium sized leek

Low fat or regular chia wraps (or wrap of your choice)

Bunch of fresh asparagus

Low fat cream cheese

METHOD

Chop the leak up into thin strips and simmer with a dash of olive oil or butter. If your trying to be super healthy, just use water.

Ad chicken strips and fry until cooked through. Don’t brown the chicken, it needs to be fairly moist.

Put chicken and leak mixture into a bowl and blend or Bamix, until it’s smooth. Put aside while you steam the asparagus. You can do this on the stove or in the microwave for a couple of minutes. If you’re doing it in the microwave, ad water so it doesn’t dry out.

Spread cream cheese onto middle of wrap (2-3 cm wide). Place chicken on top and then two asparagus spears on top of the chicken. Ad salt and pepper. Then, roll your wrap up into a sausage roll shape and place onto the sandwich press.

Allow to cook on high for 2 -3 minutes. Until cheese starts to bubble. Then serve up and slice them into halves and eat!

Perfect for lunch or an easy, healthy dinner!
