One night I was so fed up with not being able to find rocky road that didn’t include peanuts (due to a peanut allergy), I decided to make my own. Ever since I first threw these ingredients together in a bowl, friends, neighbours and family have not been able to get enough, and it’s all due to the good quality chocolate and gooey mixed berry centres.

Ingredients

2 x blocks good quality dark chocolate

2 x packets of Natural Confectionary mixed berries

1 x 500g pack of Pascals pink and white marshmallows

3 x large handfuls Yummy Snack Foods Dry Roasted Almonds

Method

Line a glass dish or tin with non-stick baking paper and set aside. This recipe has a good thickness when using a dish 28cm x 18cm or thereabouts.

Break both dark chocolate blocks into smaller segments and place into a glass/ heatproof bowl. Place the bowl over a saucepan of gently simmering water and continuously stir the chocolate with a heatproof spatula until all has melted.

Remove from heat and wait 5 minutes for the chocolate to cool slightly. Add the Dry Roasted Almonds and mixed berries and fold into the chocolate until all are coated.

Add in the marshmallows and stir / fold all ingredients in the bowl together until the marshmallows are fully coated.

Pour the mixture into the dish and spread out until one consistent layer is achieved. Place into fridge overnight to allow the chocolate to set.

Once set, cut into desired pieces and store in an airtight container.
