Recipe: Wild Rice Salad with Cherries, Cranberries & Feta

Serves 10 people.

Ingredients

500gm Wild Rice *

1tbs G-Fresh Tuscan Seasoning

1 Lemon, juiced

4 tbs Olive Oil

1 cup pitted and halved fresh Cherries

1/4 cup dried Cranberries

150gms Feta, crumbled

1/2 cup Pepitas1/4 cup toasted Pinenuts

Small bunch of fresh Basil, roughly chopped – reserve a few sprigs for garnish

2 handfuls Baby Rocket

G-fresh Salt and Pepper

Extra Cherries and Cranberries to garnish

*TIP – Wild rice blends are readily available in most good supermarkets and health food stores. It can be substituted for Brown rice or Arborio.

 

Method

Cook the rice according to the manufacturer’s instructions. Drain well.

Stir through the G-fresh Tuscan Seasoning, olive oil and lemon juice, then season well according to taste and set aside to cool.

Place the cooled seasoned rice and remaining ingredients into a large bowl, stir gently to combine. Place the salad onto your serving plate and top with the garnish.
