LEMON THYME BASIL CAKE

Lemon Thyme Basil Syrup Cake

INGREDIENTS :: CAKE

2 lemons – juice & rind

75g butter softened

80g raw sugar

1 egg

1t pure vanilla essence

2t G-Fresh Lemon Thyme Basil seasoning

110g SR flour

1/3C milk

METHOD

1. Preheat oven to 160*C

2. Cream butter & sugar until pale and fluffy, then add in egg, vanilla essence, G-Fresh seasoning, lemon juice and rind. Add in flour and milk, mix till combined. Pour into greased 6″ cake pan and bake for 50mins and skewer comes out clean. While the cake is in the oven it’s time to make your syrup.

INGREDIENTS :: SYRUP

1/3C raw sugar
1 lemon – juice & rind
2T water

Bring the syrup ingredients to a boil then reduce to simmer until sugar has dissolved. When the cake comes out of the oven pour the warm syrup over the hot cake and set aside until completely cooled before icing.

INGREDIENTS :: ICING

125g icing sugar
1/2 lemon juiced

Whisk together and drizzle over cooked cake then garnish with lemon thyme buds and serve with cream.
