Mexican Chilli Rice

INGREDIENTS

 2t G-Fresh Garlic Powder

2t G-Fresh Onion Flakes

1t G-Fresh Cayenne Pepper

1t G-Fresh Atlantic Sea Salt

1/2t G-Fresh Cracked Pepper

1t G-Fresh Chilli Flakes

1t G-Fresh Smokey Paprika

1t G-Fresh Sweet Paprika

2t G-Fresh Cumin

1t G-Fresh Cinnamon 

500g premium beef mince

2 x 400g tins crushed tomatoes

2 corn cob (cut kernels off)

2 zucchini (grated)

1 red capsicum (finely diced)

1 tin kidney beans (drained)

2C cooked brown rice

2C shredded cheese

METHOD

Brown beef mince in heavy based oven-proof pot.

Add in your Mexican spice mix, made from all of the above G-Fresh ingredients, then stir through.

Add in your veggies, tinned tomatoes, beans and cooked brown rice, then stir through. Sprinkle grated cheese over the top.

Place in oven for 20 minutes until cheese is golden and bubbling. Serve with corn chips and sour cream.
