I love this recipe as these balls are so easy to make and can last in the freezer for weeks, ready for the quick grab and go during a busy week….and did I mention they taste delicious!

Ingredients 

300g Yummy Snack Foods Raw Almonds

1 cup Yummy Snack Foods Pitted Dates

40ml (approx.) date water (refer to method)

50g raw oats

5t raw cacao

1t natural vanilla paste (or essence)

1t G-Fresh Ground Cinnamon

Pinch G-Fresh Himalayan Pink Sea Salt

1/2 orange – (½ orange zested and ½ orange juiced)

50g vanilla or chocolate protein powder

Yummy Snack Foods Coconut Flakes (to roll balls in)

Method

Soak the dried dates in a bowl of hot water for 10 minutes to rehydrate. Once rehydrated, drain water (keep approx. 40 ml of the date water to add later if the mixture is too dry. You need it to be sticky to form the balls).

Roughly chop the coconut flakes and place into a bowl and set aside for later.

Place almonds into a food processor along with the cinnamon, Himalayan sea salt, cacao powder, protein powder, oats and orange zest and blitz until crumbly (almond mixture can be processed to your desire – make them as chunky or finely blitzed as you prefer).

Add the soaked dates and vanilla paste and process again until the mix starts coming together. Add the orange juice and blitz. If the mixture is still rather dry, add the date water a little at a time between blitzes until the mixture forms a soft ball.

Roll the processed mixture into 30 balls and finish by rolling them in the chopped coconut flakes.

Note – these keep exceptionally well in the freezer for 6-8 weeks.
