Ingredients

8 Brioche Rolls (hotdog shape), halved lengthways
40g butter, at room temperature
150g Menz FruChocs, coarsely chopped
450mls full cream milk
250mls pouring single cream
3 eggs
50g caster sugar
1 tsp vanilla extract
1 tbsp finely grated orange rind
Vanilla custard or ice cream to serve

Method

Preheat oven to 160°C degrees fan-forced.

Spread cut side of brioche rolls with butter then arrange half the rolls, slightly overlapping, in a 1.25L loaf pan. Top the brioche rolls with half of the FruChocs. Repeat the layers with the remaining brioche pieces and FruChocs.

In a mixing bowl, whisk the milk, cream, eggs, sugar, vanilla and orange rind until well combined. Gently pour the mixture over the brioche layers and set aside for 10 minutes to allow the milk mixture to absorb into the brioche buns.

Place the loaf pan in a deep roasting dish then pour in enough boiling water into the roasting dish to come halfway up the sides of the baking dish. Bake in the oven for 1 hour or until the pudding is just set.

Serve warm with vanilla custard or ice cream.
