Every time I go through a healthy eating phase, I get so sad that I have to part ways with my Mexican addiction. Well — I won’t suffer any more, now that I’ve got this healthy dish!

Ingredients

1 bag mixed lettuce

1 cup shredded cheese

1 canned corn

3 tomatoes

1 bunch coriander

1 red capscium

1 green capsicum

2 chicken breasts

1T G-Fresh Cumin

1T G-Fresh Ground Coriander

1t G-Fresh Chilli Flakes

1T G-Fresh Paprika

Grain of your choice (I used a mixture of brown rice and quinoa)

Sour cream

1 avocado

Method

This recipe is all about being organised – the idea is to get all the elements ready to go in little bowls, and then everyone can build their own salad bowls!

Lettuce :: Chop the mixed lettuce leaves into bite sized pieces, and set aside in a bowl.

Salsa :: Chop the tomato up and squish out the main liquid/seeds to make it a bit less soggy. Dice the main part of the tomato and add to a bowl. Drain the corn and pour the corn into the bowl. Chop the coriander leaves (whole bunch) up finely and add to the bowl. Add the juice of an entire lime, and a pinch of salt and pepper and mix.

Cheese :: Set out the cheese in a small bowl.

Sour cream :: Set out the cheese in a small bowl.

Guacamole :: Mash the avocado up with half a lime, a pinch of salt and pepper, and set aside.

Grain :: Cook (or reheat) the grain of your choice. Being a single gal, I usually get small ready-to-go pots of mixed brown rice and quinoa so there is no wastage. Heat it up and set aside.

Chicken fajita mix :: Slice the capsicums up into thin strips and add to a fry pan with some olive oil on a medium heat. Add the diced chicken breast into the pan as well and begin cooking. Sprinkle the Chilli Flakes, Cumin, Paprika and Ground Coriander over the chicken and capsicum and continue to cook until chicken is cooked through and capsicum is softened. Remove from heat.

All the elements are ready and now you can start assembling! My general process is to add a couple of spoonfuls of the grain mixture on the edge of the bowl and then fill the rest of the base of the bowl with the lettuce. On top of the lettuce bed, add the fajita mix, salsa, cheese, sour cream, and guac.
