These Pistachio Butter Balls are filled with goodness — they’re gluten free, refined sugar free, dairy free, vegan, full of healthy fats, guilt free, and best of all… they’re FESTIVE, perfect for this time of year.

Note :: this recipe makes 12 x balls

Ingredients

Filling:

1 cup pistachios

2 tbsp. coconut oil (melted)

3 tbsp. rice malt syrup

1 tsp. vanilla extract

Coating:

85g dark 90% chocolate (I use the brand ‘Alter Eco’)

2 tbsp. crushed pistachios

Goji berries

Method

Combine all filling ingredients in a food processor until combined.

Spoon mixture into a container & freeze for 30 mins or until firm.

Remove filling mixture from freezer and roll into balls (about a tsp. of mixture per ball)

Place rolled balls in the freezer for 30 minutes.

Melt coating chocolate in microwave.

Remove balls from freezer & one by one, use a toothpick to dip balls into melted chocolate.

Sprinkle crushed pistachios and 2 goji berries on top of each ball.

Place back in the freezer for for 30 minutes to set.

Serve and impress your guests!

Note: these bite-sized goodies will keep in the freezer for up to 1 month.
