Recipe :: The Greek Vegetarian

OMGeeee, this quick and easy recipe by the lovely Helen from @thegreekvegetarian has our mouths watering! It’s completely addictive…not only in taste but also in addiction to adaption. This recipe can easily be adapted to incorporate your favourite flavours although chocolate mousse by itself isn’t too bad at all. Enjoy!

Ingredients

200g milk chocolate

30g unsalted butter

3 eggs, separated into egg whites and yolks

1 tablespoon caster sugar

1 cup thickened cream

Method

Place the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Once smooth, allow to cool for a few minutes and whisk through the egg yolks till well incorporated. Set aside.

In a stand mixer, whisk the egg whites until soft peaks form. Gradually add in the sugar and beat until stiff peaks form, being careful not to over-beat.  In another bowl, whisk the cream until soft peaks form.

Add the whisked egg whites through the chocolate mixture and gently fold the mixture together until well combined. Once completed, add the whisked cream to this mixture and old through gently. Try not to over-mix at any stage to ensure your mousse remains light and fluffy.

Spoon into serving glasses and refrigerate until set. Top with raspberries to serve.
