Serves :: 10 cookies


2 eggs
½ cup coconut sugar
1 tsp vanilla extract
1 cup smooth peanut butter
1 cup rolled oats
1 Violet Crumble
½ tsp baking soda


Pre-heat oven to 180 degrees Celsius.

Using an electric mixer, beat eggs, coconut sugar, vanilla extract, and baking soda for 2–3 minutes until light and fluffy.

Add peanut butter and beat until combined.

Fold in the oats and mix well.

Crush Violet Crumble and set aside.

Using a small amount of mixture, roll into a small ball and place onto a lined baking tray. Repeat with remaining mixture.

Using your fingers, flatten the balls slightly and place crushed Violet Crumble on top.

Bake for 8 minutes. Remove and place onto a wiring rack to cool.
