Ingredients (serves 12)
2kg pork belly
1kg scallops
G-Fresh Natural Sea Salt Flakes
G-Fresh Chilli Sea Salt Flakes
Olive Oil
Marinade
2t G-Fresh Minced Ginger
2t G-Fresh Minced Garlic
Pinch of G-Fresh Chillies Crushed (Hot)
Pinch of G-Fresh Chilli Sea Salt Flakes
Pinch of G-Fresh Pepper Black (Ground)
Pinch of G-Fresh Chinese Five Spice
Pinch of G-Fresh Sesame Seeds
Honey
3T soy sauce
2T sesame oil
2T brown sugar
3T hoisin sauce
Juice of 1 lemon
Garnish
2 sprigs of spring onion (chopped finely)
1 bunch of coriander (chopped roughly)
Zest of 1 lemon
G-Fresh Sesame Seeds
Balsamic glaze
Method
Combine all the ingredients for the marinade in a saucepan and simmer until it thickens
Drizzle the meats with a small amount of oil, G-Fresh Natural Sea Salt Flakes and G-Fresh Chilli Sea Salt Flakes and then cook the pork and scallops on the BBQ. Make sure to put the pork on first as it will take the longest to cook.
While the pork and scallops are cooking, brush with the reduced marinade to make it all nice and sticky. Set aside once cooked through.
Cut pork into cubes, top with finely chopped or minced scallop, and garnish with lemon zest, fresh coriander, spring onion, balsamic glaze and a sprinkle of G-Fresh Sesame Seeds.
