Add some exotic flavours to your life with this easy-as-pie marinade and vibrant slaw.

Ingredients

Grilled Korean chicken
1kg chicken drumsticks
1 tbsp sesame seeds
1 tbsp parsley, chopped
1 packet Masterfoods Charred Korean
Barbecue Marinade

Spicy slaw
Roughly 6–7 cups of your chosen shredded veggies (eg. cabbage, carrots, capsicum, snow peas, broccoli, brussel sprouts)
3 spring onions, sliced
1 cup coriander, chopped
Toasted sesame seeds, optional
Roasted crushed peanuts or cashews, optional

Dressing
3 tbsp olive oil
1 tbsp sesame oil
¼ cup rice wine vinegar
3 tbsp honey
1 tbsp soy sauce
1 garlic clove, finely minced
1 tbsp ginger, finely chopped
½ teaspoon salt
½ teaspoon chilli flakes or chilli paste, optional

Method

• Preheat oven to 180°C fan-forced.
• Toss all slaw ingredients together in a large bowl.
• Whisk all dressing ingredients together in a small bowl.
• Pour dressing onto the slaw and toss well.
• Place chicken in a large baking dish and pour the marinade sauce over each piece. Toss the chicken to ensure fully covered in sauce.
• Bake for 20 minutes, then baste chicken with sauce from the pan and bake for another 15–20 minutes.
• Remove from oven and allow chicken to rest for 5 minutes.
• To serve, sprinkle the chicken generously with sesame seeds, chopped parsley and enjoy with the slaw.
