Being healthy doesn’t mean missing out on all the delicious foods that you love, that’s not fun for anyone! You can still make your fave dessert recipes using slightly healthier and more nutritious ingredients!

This Healthy Lamington recipe is higher in protein and good fats than the original, replacing butter with macadamia oil and white flour with a buckwheat alternative. Australian Institute of Fitness nutrition expert Shivaun Conn says that buckwheat flour is higher in protein than its white counterpart. Plus, macadamia oil is high in anti-inflammatory monounsaturated fats.

INGREDIENTS Makes: 12

Lamington Cake

4 eggs

5 tablespoons macadamia nut oil

a dash of maple syrup

½ cup buckwheat flour

1 teaspoon of baking powder

Chocolate and Coconut Topping

100g dark chocolate of your choice

4 tablespoon coconut oil (melted)

2 tablespoons cacao powder

½ cup shredded coconut

Raspberries to serve (optional)

Method

1. Pre-heat your oven to 160 degrees celsius

2. Whisk the eggs together in a bowl one by one until combined

3. Gently pour in the maple syrup and macadamia oil

4. Sift the buckwheat flour into the bowl and combine with baking powder

5. Spread into a 22 x 5cm baking pan

6. Bake for 25-30 minutes until slightly golden on the top and a skewer returns clean form the cake

7. Remove to cool and cut into 12 pieces whilst you prepare the chocolate and coconut topping

8. To prepare the chocolate coating, melt the chocolate in a bowl suspended over boiling water on the stovetop

9. Melt the coconut oil, then combine with chocolate and cacao powder

10. Ensuring you lamington cake has cooled significantly, roll each square in the liquid chocolate and then quickly transfer to the bowl of coconut and roll to cover every edge

12. Repeat with each square and serve with fresh raspberries or berries of your choice
