Ingredients (serves 6)
6 x medium peaches – halved and pitted
1/4C balsamic vinegar
Pinch of sea salt
Optional – your favourite vanilla ice cream. We love SA’s Golden North!
Ingredients for Pancakes (to serve)
1C of plain flour – sifted
1T baking powder
Combine the vinegar, honey and salt in a small saucepan and stir over medium heat for 2 minutes until dissolved.
Put aside about a quarter of the mixture for brushing the peaches.
Keep remaining mixture over the medium heat + simmer for approximately 5 minutes until it starts to thicken.
Remove from the heat and your glaze is now ready!
Place your peaches on the grill of the BBQ (flesh side down), and brush with some of the reserve balsamic mix, then continue to grill on an oiled BBQ for around 6 minutes.
Flip the peaches, brush with some more of the reserved balsamic mix and then grill for a further 6 to 8 minutes until looking golden.
To make the pancakes, whisk all ingredients together and then fry in a non stick pan for a couple of minutes each side.
To serve, plate up pancakes with glazed peaches and ice cream, and drizzle some of the reduced glaze over the top – and ENJOY!
