I’ve never eaten red meat in my life… but I loooove chicken, and am always on the hunt for new finger-licking chicken recipes that my kids will love. This is my mother-in-law’s famous Glazed Thai Chicken recipe.

Ingredients

12 Inglewood Farms Organic Chicken Thighs, browned in olive oil
1/2 cup Spring Gully Sweet Chilli Sauce
1 tbsp fish sauce
1 tbsp peanut oil
1 tbsp fresh coriander, chopped
2 tbsp lime juice
2 tbsp soy sauce

Method

Heat oven to 180° fan-forced.

Lay chicken thighs in a baking dish in a single layer.

Combine sweet chilli sauce, fish sauce, peanut oil, coriander, lime juice and soy sauce in a jar and shake to combine. Pour the marinade over the chicken thighs.

Bake for 20 minutes, or until cooked through and browned. Serve on mashed potatoes with charred greens.
