Glass of Goodness, as seen on episode one of Adelady Season 2
Deconstructed chocolate lime pepper mousse with frozen raspberries & lime curd with a chocolate crumble
250G chocolate cubed
30g butter cubed
3 free range eggs – separated
1T caster sugar
250ml cream – whisked to medium peak
G-Fresh Lime Pepper Seasoning
In a small saucepan place the chocolate and butter over a low heat and stir until melted. Stir through the 3 egg yolks and set aside.
In a separate bowl, whisk egg whites to soft peak. Add in a tablespoon of sugar and whisk to stiff peak.
Fold the egg whites through the chocolate mix then the cream. Put in the fridge until set (minimum 3 hours).
Serve in a glass with crumbled brownie slice, lime curd (which can be purchased from Romeo’s Foodland) and mixed berries.
